Sunny Day Rainbow Cake (from Omnomicon)
2 boxes white cake mix
24 oz of clear diet soda (2 cans, ginger ale and sprite work well)
gel food coloring
16 oz whipped topping
2 oz instant fat-free sugar-free pudding mix (2 smallish boxes)
Mix Sprite and dry cake mix. Divide batter into six equal portions (a little over a cup in each portion). Stir in gel colors into each batter bowl. For the first three colors in your pan, measure out about 1 cup of batter and drop into the middle of the pan. Do not spread them. They will spread on their own with the addition of each new color. In the first pan, order it red, orange, and yellow. In the second pan, order if purple, blue, and green.
Then, pour in remaining three colors into each pan (green, blue and purple in the first pan; yellow, orange, and red in the second pan).
Bake the cake as instructed on the box. Check it when the box says to, but usually it’ll need an extra 5 or 10 minutes because of the density of the soda method. Just keep baking, checking back every 5 minutes or so until a toothpick to the center comes out clean. Let cool completely before moving to a wire rack.
**Mine was very moist, but very crumbly.** Mix the whipped topping with the pudding mix to frost.
